Fast and Easy Snacks
Snack #1: Toffee
I came upon this recipe in my mom's recipe book (yeah, I'm a little recipe thief!) and couldn't believe I hadn't made it before because it's SO EASY! And also dangerously delicious.
12 graham crackers
1 1/4 sticks butter
3/4 c brown sugar
1 1/2 c chocolate chips
Preheat oven to 400°
First you line a 10" x 15" cookie sheet with foil and arrange 12 whole graham crackers to cover the cookie sheet.
Then melt the butter and stir in the sugar until it's mixed. Pour the mixture over crackers and bake at 400° for 5 minutes.
Then comes the chocolate! Sprinkle the chocolate chips over the crackers and melted deliciousness and bake another 30 seconds (to melt it). Spread the chocolate with a knife.
Now comes the part that takes longer than ten minutes! :( You have to wait for the pan to cool off enough to put in the freezer. Once this happens, the toffee has to go into the freezer until it's hard. Hard like, you break it into chunks hard. This part does take probably about an hour.
But then you get this! And it's all worth it, because you have toffee! And it's pretty good stuff!
Snack #2: Yum! (I have no name for this snack. Hence I just called it yum!. Because I'm original.... :P)
Yum! has 4 ingredients. Only 4! And it does not require an oven or an hour of waiting! Yum! is just amazing that way.
6 blocks white almond bark
2 teaspoons peanut butter (teaspoons like silverware, not like measuring because those just don't like peanut butter too much)
1 3/4 c rice crispies
1/2 c broken pretzels
Melt the almond bark
Then add the peanut butter. (I strongly suggest doing this as step two instead of three because........ yeah. Sometimes I fail at keeping my brain present while I cook. The end. Add the peanut butter BEFORE the rice crispies! Doing this is good. )
I assure you, this IS peanut butter. Just.... weird peanut butter! |
And the broken pretzel pieces
Mix the yum happily and spread it on a cookie sheet lined with wax paper.
At this point you can add sprinkles or something if you so desire. Just to make it cute. Then, if you put it in the freezer, it only takes about 10 minutes to become hard. Once this happens break it into pieces....
And store it. Or eat it. Or something.
The End! :)
